Method:
1.Preheat oven to 177°C. Line two 9-inch round cake pans well with parchment paper for easier removal and set aside.
2.Whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt in a large bowl. Put aside.
3.In another large bowl, whisk together the oil, eggs, brown sugar, caster sugar, sour cream, and vanilla extract until completely combined. Add grated carrots to wet ingredients and mix until well combined.
