The Science Of Making A Chocolate Cake
The science of chocolate cake is simple: it's all about the chocolate. The better the quality of the chocolate, the better the cake will be. That's why it's important to use a good-quality chocolate when making a chocolate cake. The chocolate should be at least 60% cacao, and it should be finely ground so that it melts easily. The best cocoa beans come from countries like Ghana, Ecuador, and Brazil. The cocoa beans are fermented and then dried in the sun before they are shipped to the chocolate factory. When choosing a recipe, look for one that uses cocoa powder rather than chocolate chips, as the powder will give the cake a more intense chocolate flavor.
